I hope you aren’t sick of my traditional Polish recipes because I have another one for you. It’s the last one from our Christmas Eve dinner. I know it’s late for Christmas recipes. Forgive me, haha.

This cooked vegetable and egg salad is a traditional Polish holiday salad. It is my mom’s recipe so naturally that means it’s already healthier than the typical traditional Polish recipes. I got my healthy eating from my mom. Gotta love it!

This cooked vegetable egg salad makes an appearance on our family dinner table twice a year – every Christmas and every Easter. We love it. My dad especially, he is always the one to initiate that we should make it. So maybe that makes the recipe just as much my dad’s as it is my mom’s. Let’s just say it’s a family recipe, that probably sums it up much better.

My dad loves this one. Loves! He tends to add more mayonnaise than we do, but that’s the beautiful thing about it – you add as much as you want in your own serving. It’s better to let the salad stay in the fridge without mayo added so that way the salad stays fresh much longer. Although ours is usually gone in 3 days. What can I say? We like our holiday food ;)

This recipe makes one huge bowl. It’s huge. Like a whole lot of servings of salad. That’s why we make it for the holidays. It’s a special occasion.

Going through all the labor intensive work of cutting and peeling cooked vegetables isn’t exactly my definition of fun, although it goes much faster when you have someone else helping you and doing it with you. The atmosphere automatically becomes much more cheerful and bright. I always make it with my dad while my mom prepares other dishes holiday dishes.

Here’s how the salad looks when it’s all done – in all its layered glory – the herring, potatoes, beets, and the egg topping… Yum. And yes, this photo is kind of crappy quality. Apparently I accidentally deleted some of the pics on my camera and left the copies on my parents’ computer. So I had to take a screen print pic from the video. Sigh, faaaaail.

I did snap some pics of the process too though. Here’s my mom draining the onion after it’s been sitting in boiling water. Don’t skip this step, it is important to calm down the intensity of the onion.

Have I ever mentioned that beets are my big love? Yes, I love beets. They are just so yummy. That’s my dad cutting them up. We had a few left over for the red borscht at Wigilia (Christmas Eve) and one for me to eat by itself. Yes, I eat cooked beets. By themselves. They are good, what? Try it, you’ll see what I mean. Beet Love!

Herring Potato Salad

The salad is really gorgeous to look at. I recommend making it in a glass bowl. We don’t have one so we opted for a regular big bowl. But you will really enjoy looking at the layers of deliciousness if you use a clear bowl. Try this salad out! It’s one of my favorites, right next to the cooked vegetable and egg salad (recipe coming next week!)

Beet & Tomato Spring Salad

My mom is a great cook. But a thing I really love is that she makes her recipes healthy, like me. In fact, she’s the person where I got my healthy living inspiration from. She’s the one that taught me to appreciate whole and clean foods. So she rocks, pretty much.

She made this salad and it’s delicious. She always throws just a bunch of random stuff together in a bowl and it always makes a delicious salad. Might as well give her the credit and share this recent one with you guys.

She was making beet soup (my favorite) and we had some beets left over. Perfect idea for a salad add-in, no?

Tuna Kefir Salad (high protein)

Lately, Tuna Kefir Salad has been frequenting my dinner option. I’ve posted about it before in my WIAW and Instagram multiple times but I thought I’d share exactly what it is I put into it. This is a super quick, easy, and filling salad with a big pow of protein!

I’ve been eating a lot more veggies lately and I love it. I’ve been going through two bags of spring mix and spinach in only a couple of days! I feel that when I eat more veggies throughout the day, I feel better and lighter and end up eating less calories than I would otherwise. It’s a win-win!
