Chocolate Peanut Butter Chia Puddings (Virtual Vegan Potluck May 2013)

A year ago I participated in the very first edition of the Virtual Vegan Potluck with an amazingly delicious and healthy vegan Strawberry Banana Bread. Today is the 1 Year Anniversary of the Potluck and I am participating once more! This time I am bringing you something equally as awesome and delicious – and of course, it’s vegan :) Say hello to Chocolate Peanut Butter Chia Puddings!

I’ll admit, this was not the original plan for my recipe feature. I was gonna make a crock pot chocolate peanut butter cake at first. So I did, I put all the ingredients in the crock pot and followed directions I found online with some of my own alterations. The original recipe said it should cook on high for 2-1/2 hours. Mine was cooking on already 5th hour and it was STILL not the way it should be as described in the recipe. And flavor-wise.. not a big fan either. So 5 hours went to waste and a bunch of ingredients. Oh well.

I knew I wanted to make something chocolate peanut butter but I was not gonna risk another failure. It’s my first week at my new apartment and the appliances seem to be a bit out of whack so I wasn’t gonna make anything baked, just in case it didn’t turn out again! Check out my video on how I know I’m growing up to see where I’m at with my life right now, so I didn’t want any additional problems right now. Too much stress ain’t good.

I’ve made Chocolate Chia Pudding before and I loved the result each time. So why not add peanut butter to the mix to make it even more awesome? I love desserts that can be eaten for breakfast and this is exactly what this Chocolate Peanut Butter Chia Pudding is! It’s delicious and chocolatey enough for dessert, but healthy enough for breakfast!

Should I mention that this recipe is also totally sugar free? That’s right. A pudding that is VEGAN, SUGAR FREE, and DELICIOUS. Hallelujah, they said.

Chocolate Peanut Butter Chia Puddings (Virtual Vegan Potluck May 2013)

Ingredients

Instructions

  • Put all of the ingredients in an immersion blender and blend to combine. Divide between two small glass ramekins or into one larger cup. Cover and stick in the fridge for at least 3 hours, preferably overnight. Enjoy!

    Mmmm. I’m gonna go make this now, so that I can eat it for breakfast. :-) I’ve used chia for puddings before, but never with a recipe. I also throw chia into smoothies and have used it as an egg replacer. It’s unoriginal, but I’d have to say that peanut butter IS my favorite chocolate + something combo.

    I use chia seeds here and there for egg replacements or in overnight oats but that’s about it. I kinda have a sensitivity to fiber so I have to be careful with the little buggers! haha, TMI? ;)

    Chocolate and pretzels or chocolate and bacon! It’s ALL about the sweet and salty!!

    Never had chia pudding before. Not sure if d lie the texture since its not completely smooth, but I’m definitely willing to give it a try! It looks really delicious and I love anything with peanut butter and chocolate! :)

      If you whirl it up in a blender instead, the texture will become smoother – I just like the little ballsies in the pudding that’s why I don’t whirl them up completely. But the texture can definitely become a lot more smooth :)

      Ohhh fail :( that sucks. Note to self: don’t try blending dates with an immersion blender. You know you can also try using a food processor or a regular blender for this too! It’s just the purpose of blending and combining all of the ingredients so the actual way you do it isn’t that important.

    Kammie, this sounds to DIE for! I’m sorry your first cake didn’t work out, so upsetting about the wasted ingredients, that’s always my first thought when a recipe fails! BUT it lead you to this delicious and super easy recipe that can cure any chocolate pb craving so silver lining? I think so!

    Does cookie or ice cream count as an answer to the chocolate question? LOL!

    I’ve not used chia seeds. The fact that they have been used to make “pets” since I was a kid kind of freaks me out.

    Glad you didn’t let the first recipe mishap keep you from moving forward!

    I love using chia seeds a lot but don’t know on how to use them best! This chia dessert looks easy & fast to make! I love it all!

    Yum! These look great. I’m a big fan of chia seeds, and chocolate (who isn’t?). My fave choc combos are: choc and cherry, choc and coconut, choc and mint, choc and raspberries…ok, I’ll stop now!
    I put chia seeds in my smoothies and pancakes.

      Yes! I guess crock pot cakes are just not going to happen for me, haha oh well – but I am kind of happy because the puddings are just mind-blowing. I hope you make them soon and find out for yourself :)

    I have chia seeds with my oats every morning. I love the flavour that it adds and it is supposed to be very healthy as well. Chocolate and orange is a winner for me, also any combination of chocolate and peanut butter… and the potential that I can have it for breakfast, will just put a smile on my face for the day.
