First, I’d like to thank you all for positive comments on my Energy Bar Wars post. I’m really glad you guys found it helpful! I’m planning on doing more similar posts in the future! Now, on to the recipe of the post, my Strawberry banana bread, which is a part of the feature of today: virtual vegan potluck day! This awesome event was created by An Unrefined Vegan and includes a variety of different food categories and numerous different bloggers, vegan and nonvegan!

I’m not vegan however like I said earlier, I try as much as I can to include vegan foods in my life. Especially for snacks and desserts! So here I introduce to you another vegan recipe – this time it’s a strawberry banana bread recipe.
I love that we found a whole big box of strawberries on sale at Costco. Fresh berries go super fast in our household. Well, my parents, that is. You see, I’m now on summer break. I had a week off of everything to do whatever the heck I wanted and now on Tuesday I am starting a marketing internship at a daily deals company called Brownhub.
Anyway, I haven’t made any loaf recipes because I don’t have a loaf pan in my apartment. Since I’m in my parents house for a few days, I thought it would be a perfect opportunity to put the loaf pan to a good use.
And good use, it was. This bread is so moist and delicious and it makes the whole kitchen deliciously fragnant of strawberries and bananas. Such a delightful scent. While I used honey for this recipe, you can easily sub this for agave to keep it strictly vegan. I’ve read a bit about the controversy with honey, I’ve read both arguments. However, my parents do not have any agave so the choice of honey was a given for this situation. Plus I like it, and I’m not vegan.

Strawberry Banana Bread
Adapted from Averie Cooks.
Ingredients:
- 1 1/4 cups unbleached whole grain AP flour
- 1/4 cup sugar
- 1/8 cup light brown sugar
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 medium/large banana
- 1/4 and 1/8 cup unsweetened applesauce
- scant 1/4 cup honey (or agave)
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced and diced
Directions:
Preheat oven to 350F and prepare a loaf pan by lining it with foil, allowing for overhang to easily lift out the bread.
In a large mixing bowl, combine flour, sugar, brown sugar, baking soda, and cinnamon.
Slice a banana in half. Mesh one half of the banana to make it yield about 1/4 cup, slice the other half into thin discs.
Add the mashed banana to the dry ingredients and stir. Add the applesauce, vanilla, and honey and stir until just combined.
Gently fold 3/4 cup of strawberries into the batter and stir again.
Pour the batter into the loaf pan. Top with the remaining 1/4 cup strawberries and banana slices, pressing them very gently into the surface of the batter.
Bake for 45-50 minutes or until toothpick inserted comes out clean. Allow bread to cool before removing it from the pan.
Slice and serve as is, or with toppings of choice! Store in airtight container on countertop or in freezer for up to 3 months.

Love the combo of strawberries and bananas…especially with bread! Although I am vegan, I will eat honey, but I do prefer agave (lower GI), but I think either would work great here with this bread!
