This is one of our favorite soup recipes that is both, healthy and filling (and of course crazy delicious). We have to share this recipe with you and we hope you’ll try it at home.
What makes this soup good is the combination of turkey breast, pearl barley and pickles in a veggie broth. It’s very soothing for your stomach and it’s one of those foods that are still healthy while being very comforting.

Healthy Turkey Pickle Vegetable Soup
Here’s the Recipe
Ingredients:
- 150g turkey breast
- 1 medium potato
- 1/2 cup pearl barley
- 1/3 medium bell pepper
- 1 medium carrot
- 1 medium onion
- 3 medium pickles
- 1 cup vegetable broth
- 1 tbls olive oil
- A pinch of till
- Salt and pepper to taste
Instructions:
Cut turkey breast into 1 inch cubes and put it to boil with 1 cup of veggie broth and 1/2 of pearl barley. Boil for 10-15 minutes. Meanwhile, finely slice the veggies (bell pepper, onion, carrot) and fry them in a pan with a tablespoon of olive oil until brown. Then put your fried veggies and sliced pickles into the pot and continue to boil for another 10 minutes.
Slice one medium potato into 1 inch cubes and add them to the soup. Add your seasonings. Boil for another 15 minutes.
Ideas for the Recipe
You can skip the potato if you’d like to make the soup more diet friendly. It won’t make the soup any less tasty. But if you want to keep it more filling, of course, keep the delicious potato in.
You can also add any of your favorite seasonings or veggies to the soup to make it even better. What makes it click for us, it’s the combination of that turkey breast, pickles and pearl barley in a veggie broth. Yummy!
