How to Make Chilled Strawberry Soup

In the sweltering days of summer, you are likely craving foods that are cool and refreshing. Chilled strawberry soup is one such food. It is easy to make, does not require you to turn on the oven on a hot day, and it is quick to prepare. That means you will have more time to enjoy the long summer days with your family and friends instead of spending all your time slaving away in the kitchen.

To make chilled strawberry soup, the first step is to gather the ingredients. The easy recipe we will discuss today only requires five ingredients. You will need strawberries, half and half, sour cream, sugar, and lemon juice. Since there are so few ingredients, it is important to ensure you have quality products in order to create the tastiest soup possible. If you can get fresh local strawberries, you will be amazed at just how awesome this easy recipe can be. If it is too late or early in the season to get fresh berries, don’t despair; even with store-bought strawberries, this is a tasty dish!

The amount you will need of each ingredient will depend on the amount of soup you’d like to make. This recipe gives you a great deal of freedom to make as big or small of a batch as you’d like, so you are not stuck with too many leftovers. To make two servings, you will need 1/2 pint of strawberries, 1/4 cup of half and half, 1/4 cup of sour cream, 2 tablespoons of sugar, and 1/2 tablespoon of lemon juice. You can double, triple, quadruple, and so on until you have the desired number of servings.

To prepare the recipe, simply run the strawberries through a food processor, and then stir together with remaining ingredients. It is best if chilled at least 8 hours or overnight, but you can eat it sooner if you just can’t wait that long! You can serve it with a garnish like whipped cream or mint if you’d like. However you decide to serve it, you and your loved ones are sure to enjoy this chilled strawberry soup!
