There are only a few who don’t enjoy soups. A simple vegetable soup is not just healthy, but also easy to prepare and can be teamed with any lifestyle or occasion-based dishes. You can either prepare the dish following the exact recipe, or make some alterations to suit your requirements.
A vegetable soup is basically a mixture of different fresh vegetables. The following are the ingredients required:
- Olive oil (1 tablespoon)
- Chopped vegetables: carrots, onions, green beans, zucchini, parsley, mushrooms, etc. (3 to 4 cups)
- Salt (1 teaspoon)
- Thyme (1 teaspoon)
- Oregano (1 teaspoon)
- Water (8 cups)
- Diced tomatoes (1 can)
- Beans (1 can)
- A starch source – noodles or potatoes
- 3 bouillon cubes
Making the Soup
The first stage is preparing the ingredients. Chop up the vegetables: carrots, mushrooms, zucchini, onions, potatoes, green peas, parsley, etc. Saute them. Put the green beans, onions, and carrots in a pan. Add olive oil (a tablespoon) and let it heat for some time. Sauté the vegetables for a few minutes in the oil. Add the mushrooms and continue sautéing for another couple of minutes.
Add water, bullion cubes or cooking stock, spices and potatoes to the blend and let it boil. Once boiled, bring down the heat and lid the mix. Let the boiling process continue till the potatoes turn soft – this should take approximately 15 minutes. Add parsley a few minutes before the boiling potatoes are done completely.
Beans and tomatoes are added to the mix finally – let the mixture come to a boil. Your soup is now done. You can serve the soup in its original state or add some cheese or crackers.
If you have any seasonings and/or vegetables preferences, you may add them as well. If you hate onions, you can omit them. And if you are keen on cutting down the soup’s calorie count, avoid the potatoes. Simply put, this vegetable soup can be customized to your liking.
