Peppermint Mocha Protein Pancakes

I haven’t done a recipe in a long time, I know. I’ve been busy with the Fall semester winding down but I have had an idea to make some protein pancakes that were inspired by my favorite Holiday beverage. My favorite Holiday drink is the Starbucks Skinny Peppermint Mocha. I love that there aren’t many calories in it but yet there is just so much flavor! It’s delicious.

I bought some peppermint extract from Trader Joe’s the other week and I’ve been using it a lot. I’m really feeling the whole chocolate & peppermint combination – it’s so good! So these protein pancakes were born on a nice morning after a leg workout and before a presentation I had to do in class. The last sentence was not necessary but I thought I’d add it in there to give you a bit of a background on that morning, haha, not that it has anything to do with the pancakes.

Don’t be intimidated by the fact that I’m using so much peppermint extract, I don’t personally find it that strong and the flavor of it is only slightly prominent. I think I might add even more extract in the batter next time. The chocolate covers it up quite a bit. Thankfully the sauce had a hefty peppermint flavor too so the whole thing went together very nicely.

I love protein pancakes using coconut flour because they are just so filling and big! Yet they are not super caloric at all. I think you will be pleased with these Peppermint Chocolate Mocha Protein Pancakes. Let me know if you make them!

  4. These sound delicious – I love the peppermint/chocolate combo. And I love how they use INKA too! I basically grew up drinking that stuff, and I still love turning to it when I need something warm and comforting that’s coffee-like but not πŸ˜€

    • OMG you’re familiar with Inka too?! I love it! We had it in Poland all the time and the flavor is so deliciously comforting! No one knows of it in the US when I tell them about it so you can imagine my excitement that you are familiar with it! πŸ™‚ yay!

  10. Definitely going to try this recipe, looks AWESOME!!!… However be careful about the hidden junk in that protein powder you recommend … ( Artificial flavors & sucrolose as a sweetener ) YUCK!!!
    Try this one called bluebonnet protein instead, one of the few that’s sweetened with stevia & from grass fed cows which is much healthier, taste is really good, better than any i have ever tried actually… Little expensive, but in my opinion worth it 4 sure ( just in case you were wondering, no i have no personal gain from that protein recommendation, just like it myself )

I know about Isopure, I didn’t realize about the artificial junk until after I bought the 3 lb canister so I have to use it all up now but I’ll definitely check out the Bluebonnet protein, thank you for the recommendation and thanks so much for stopping by πŸ™‚ Hope you stay a while!
