
I haven’t done a recipe in a long time, I know. I’ve been busy with the Fall semester winding down but I have had an idea to make some protein pancakes that were inspired by my favorite Holiday beverage. My favorite Holiday drink is the Starbucks Skinny Peppermint Mocha. I love that there aren’t many calories in it but yet there is just so much flavor! It’s delicious.
I bought some peppermint extract from Trader Joe’s the other week and I’ve been using it a lot. I’m really feeling the whole chocolate & peppermint combination – it’s so good! So these protein pancakes were born on a nice morning after a leg workout and before a presentation I had to do in class. The last sentence was not necessary but I thought I’d add it in there to give you a bit of a background on that morning, haha, not that it has anything to do with the pancakes.
Don’t be intimidated by the fact that I’m using so much peppermint extract, I don’t personally find it that strong and the flavor of it is only slightly prominent. I think I might add even more extract in the batter next time. The chocolate covers it up quite a bit. Thankfully the sauce had a hefty peppermint flavor too so the whole thing went together very nicely.
I love protein pancakes using coconut flour because they are just so filling and big! Yet they are not super caloric at all. I think you will be pleased with these Peppermint Chocolate Mocha Protein Pancakes. Let me know if you make them!
