The other day, I went ahead and visited a nearby Farmer’s Market. I’ve been dying to check it out from all that you guys talk about how awesome they are – and how much cheaper all of the produce is! Unfortunately, as I talked about yesterday, the prices were not very competitive, they were actually quite a bit higher than I expected them to be. Not horrible of course, but higher than I thought. Plus there wasn’t as much stuff there as I expected to find either.

I did however find some amazingly flavorful organic strawberries. I paid $6 for a pint and I was in heaven – the flavor of these babies was just as good as the strawberries I remember from Poland. So much flavor in every bite, this sweetness, the delicate tartness… oh man, I just love berries. So much!

I had some kiwi left over from my recent grocery trip and I’ve been getting tired of eating them by themselves. So after mixing and matching with ideas and what I’ve seen all around I put all of the stuff I had together, including the unopened box of Quinoa flakes.

Strawberries, kiwi, and quinoa flakes. I bought the quinoa flakes 2 months ago because I found a cool recipe for it. But you know, what else is new, I lost the recipe. So the box has been sitting there unopened ever since. Until now, that is 🙂 When these muffins were baking the whole apartment was filled with the aroma of strawberries and kefir. Such a nice fragnant scent.

I enjoyed a muffin with a glass of strawberry banana protein shake post workout 🙂

  1. Wow your strawberries are expensive! I paid $10.00 for organic and I got 6 pints (half a box). For me it’s usually cheaper, but it maybe because I live near the orchards and farms? Now to the good stuff, your muffins look amazing. I have never seen quinoa flakes. I’ll have to be sure to look out for them next time I”m at the store. have a great weekend!!

    • Wow if they were that cheap I would definitely buy them all the time! But yeah, I do live in the heart of a big city so that might be the reason why they’re so expensive. And I got the Quinoa Flakes online, I actually haven’t seen them in any stores but I haven’t necessarily been looking.

  2. I love the green and red/pink colors of your muffins.. they are so healthy too! I wouldn’t have thought to pop quinoa in, but smart because the protein would make this the perfect snack!
    ps how did you get the nutritional box?? That’s so awesome!

    • Haha right! I used CalorieCount’s recipe calculator. I don’t always get the right info because the website doesn’t seem to have stats for every single ingredient I use so I have to add some stuff in manually. Whenever it does have all the stuff on record, might as well use the pretty box though right 🙂

  3. These look delicous! I tried making healthier muffins with almond meal recently and they were far too dense. I can’t wait to try your idea of using quinoa flakes next time:)

    • I haven’t used almond meal in any baking yet but yeah I heard the outcome can be pretty dense. I guess it’s a matter of how the proportions are in the recipe. The quinoa flakes worked really well here though so I recommend you try it out 🙂

    And strawberries are really expensive in NYC too, I usually pay $6/quart at the farmer’s market but yesterday I paid $5/pint. At the farms, which are actually by where my parents live, they’re not much cheaper. I’m so jealous of people who have cheap farmer’s markets.

    • Righttt!? Man, and I love strawberries so much too :'( I would totally throw some in but they will probably go bad since they have dairy and eggs in them and it’s summertime. BUT you can make them, they’re easy 😛
