Yay for new theme for the month of August! Jen came up with this theme to allow us to talk about summer picks, fun summer salads, and other summer related things. I really liked the Fitness theme so I’m gonna stick with that in my posts too. Ha!

I’ll start off with a review of an online store:

Now, back to WIAW: This is a day of eats from Monday.

I woke up energetic and excited to work out on Monday. I love when that happens. I went to the gym and did an intense workout for my glutes and legs. I included some abs and ended with a good 10 minute stretching session. I love working out in the morning on empty stomach because it looks so little from the side. It makes me happy. Too bad it doesn’t look that little from the front, ha.

So for breakfast I really wanted a mocha banana protein shake but unfortunately I ran out of Special Dark cocoa powder (my favorite!). So I went ahead and made myself some PB&J oat bran. Did not disappoint. I just made some alterations and I added an extra 1/4 scoop of vanilla egg white protein to the oat bran as it was cooking. Then I added a bit too much water to my PB2 mixture and the oat bran looks like it’s drowning, haha. Tasted just as delicious (if not better). Mmm.

I had delicious green tea mixed with blueberry white tea. Another sad thing – I ran out of green tea after this bag! This was alarming because I wasn’t planning on going to the grocery store until Wednesday (well, that makes today, I guess? lol)

Anyway, after breakfast I had a whole bunch of stuff to do and I didn’t eat until late. On my way home, I decided to stop by Block 37 and get a free chocolate from Godiva (perks of being a member – do it!) I chose a hazelnut caramel seashell. It was pretty good. But their truffles are better.

Then I went ahead and got my favorite frozen dessert of all – Starfruit Cafe. Mmm. I did a swirl of raspberry and apple pie topped with mixed berries, blueberries and cinnamon. I love that place. I haven’t been there in a while and I definitely missed it.

Walking home from Block 37, I noticed that the new Target on State St is now open! So I went in. Thankfully I bought more green tea and cocoa powder (just regular, not the special dark stuff, they didn’t have that kind, sadly). That Target is HUGE! Seriously. Wow.

When I got home, I did some work on my laptop and got hungry again. I saw my mom earlier who gave me a small bag of tomatoes, cucumbers, and peaches from the garden — she recommended I eat the peaches today because they tend to go bad quickly. So what better way than in a salad? Heyyy there’s your summer staple – fruit in salads. Love it!

In the bowl went 2 peaches sliced, cucumbers, onions, spring mix + spinach, goat cheese, and lemon + balsamic, and various spices and seasonings. Mmmmmmm. Have I mentioned how obsessed I’ve been with goat cheese + fruit in salads?

Then I did some more stuff on my laptop and I was getting antsy. I think my metabolism has been pretty high lately because I just hate sitting in one place for too long now. I used to be able to sit and sit and sit and then lay down and lay some more. Now whenever I sit for too long, I get antsy and I feel like I should be moving, doing something more physical. So I went to the gym again. I went ahead and did 20 minutes slow cardio on the elliptical while reading “Drop Dead Healthy” (recommend it, by the way! The book is HILARIOUS and really well written, plus it includes a lot of fun and interesting health facts. I’ll do a review once I’m done with it) Then I went to do a yoga class but I left after 30 minutes cause I wasn’t feeling it. The instructor sucked. Plus I was hungry.

On my way home I felt like I needed food now so I stopped by Jimmy John’s and got a Turkey Tom (#4) no mayo. Doesn’t it look all sad though? It looks so boring.. and lonely.. and sad…

As a self-proclaimed topping queen, of course I decided there is a need for this sad looking sandwich to be dipped in garlic salsa..

Ah, heck, dipping it wasn’t enough. It’s better to just slather the darn salsa on the sandwich. I don’t mess around.

  3. Just order my first batch ever of PB2..can’t wait to try it!!! Recommeded ratios? (Other than yesterdays obviously 🙂 )

    • If you want strong peanut buttery flavor, go for 2 Tbsp.. if you want a more subtle flavor, use 1 Tbsp. I don’t usually use more than 2 Tbsp but that also depends on how much you’re making 🙂 In shakes and yogurt parfaits though, I usually add one or two 🙂 I’m sure you’ll LOVE it!

  4. The only thing better than goat cheese and fruit in a salad is goat cheese, fruit, and nuts in a salad. I’m partial to strawberries and pecans.
    You probably have a ton of energy because you eat really well. When I eat nutritious and healthy (and delicious) my energy gets crazy high too. Although maybe I’m confusing it with a sugar high. 🙂

  14. Hey Kammie! I came across your blog recently and thought I’d finally comment. I’m a Chi-town girl too! I live in Lakeview. I have yet to try out Starfruit–but definitely have passed by it several times. I live pretty close to the one on Halsted in lincoln park. I’m also a lover of Kefir. Plain is my fave! I love the tartness of it. Looking forward to reading more! 🙂
